I have an 18 month old and he's going through the hitting stage too. I tell him "no" the first time and if he does it again I use a modified time-out. I hold him in my lap for 30 seconds gently and calmly restrained. You have to make it very clear that the behavior is not acceptable.

You need to do a bit more child proofing re: the cans and books. About the toys, get used to it. He's just having fun.
