Kaytee, there is only one booster I know of that has LATCH. It's the Clek backless booster, and yes, it can be left in the car and doesn't need to be buckled when unoccupied because it's connected to the lower LATCH anchors.
I've taught my kids to automatically buckle in their boosters before getting out of the van. Obviously, my minivan doesn't have a trunk and buckling is much easier than removing the boosters when not in use. |

When she went to the doc today she is still 21lbs 4 oz and will be 22 months old in just over a week |

DS (11) just recently started riding without a booster seat. He's finally 4'9" and passes the 5 Step Test. http://www.carseat.org/Boosters/630.pdf |
